The oil level is also a factor that affects the degree of gelatinization and quality of the dough. If the oil level is too low, the noodles will dehydrate slowly, resulting in oil consumption. If the oil level is high, the circulation speed is accelerated and it is prone to rancidity.
If the content of saturated fatty acids in the oil is low, the dough will not only consume a lot of oil, but also be prone to rancidity. High quality fried dough comes out of good quality. Most manufacturers generally use palm oil with a melting point of 26-30°C. In addition, dough quality will also affect frying results.
